Responsibly Sourced Cacao, Ethically Made Chocolate

For all the products at Shane Confectionery we use our own ethically made chocolate, responsibly sourcing cacao beans through Uncommon Cacao, and sugar from Itaja Sugar. Most of the chocolate that the world consumes has been at least in part grown, harvested, fermented and dried by exploited laborers, and with disregard to the environment. Uncommon Cacao is a transparent cacao broker who ensures that farmers are paid a premium, and is working towards sustainable future. We know where Shane Chocolate comes from, and who is growing it.

Through making our own chocolate, we hope to highlight the vital work of the farmers, and to honor the long tradition of chocolate making here in Philadelphia.

Our dream is to one day make all of the chocolate for our entire company! But for now, the chocolate products sold through our Franklin Ice Cream brand are made with Guittard chocolate. Through their Cultivate BetterTM Cocoa program, Guittard aims to source sustainable ingredients, and uphold social integrity, by diving deep into their supply chains.

    Cacao Hunters of Tumaco, Colombia

    Cacao Hunters is the first Colombian company that is sourcing and producing chocolate in Colombia.

    Since 2009, owners Carlos Ignacio Velasco and Mayumi Ogata (a former pastry chef) have been working in economically challenged areas in Colombia, like the port city of Tumaco, helping them to reach sustainability by improving the quality of their cacao, allowing them to be paid a premium price.

    They work with farmers, helping them to establish systemic improvements, and centralized processing. Within each region are several cacao farmers associations, that each ferment and dry their own cocoa with guidance from Cacao Hunters.

    In Tumaco, farmers today now earn 70% more income from cacao than they did prior to Cacao Hunter’s intervention.

    Öko Caribe of the Dominican Republic,

    Öko Caribe was founded in 2006, in the Dominican Republic, by owners Adriano de Jesus Rodriguez and Gualberto Acebey Torrejon. With their network of 165 farmers, scattered across the Duarte province, they produce socially and environmentally responsible, organic and UTZ certifications, cacao.

    Öko Caribe keeps a close relationship their farmer associations by providing training agricultural practices and organic certification. In addition, owners Adriano and Gualberto further offer microfinance loans to support farms, families, and communities.

    ABOCFA of Ghana

    Lead by agronomist (crop scientist) and business manager Stephen Ashia, ABOCFA (formerly Aponoapono Biakoye Organic Cocoa Farmers Association) became Ghana’s first farmer group with both Organic and Fair Trade certifications. The ABOCFA operational office is located at Aponoapono near Suhum in the Eastern Region of Ghana

    ABOCFA’s network of 1156 cacao growers is spread across 15 hamlets in the Eastern , altogether making up 1,683.3 hectares (4,159.5 acres) of organically cultivated cacao. All producer members have also agreed to avoid deforestation or expansion into forested areas for cacao production.

    Each hamlet has three representatives that work directly with the ABOCFA cooperative leadership. Together ABOCFA has invested into their communities through trainings ranging from farm productivity to labor rights, and by supporting schools, health services, sponsorship of female entrepreneurs and more.

Sweeteners

Organic, fair trade, naturally vegan, responsibly sourced sugars from Wholesome sugar is used to sweeten Franklin Fountain and Shane Chocolate.

Instead of corn syrup we use tapioca syrup, maple syrup, or honey depending on the application. Our maple syrup is from PA and distributed by Lancaster Farm Fresh Co-Op. Our five rooftop beehives are buzzing with activity most of the year, yielding a delicious honey complex honey that we sell seasonally. This urban apiary is managed by Don Shump of Philadelphia Bee Co. For our products that use honey as an ingredient, we use responsibly sourced Swarm Bustin' honey.

Eggs & Dairy

Shane's Buttercreams and Caramels are made with butter distributed by Stryker Farms located in the Pocono Mountains. Stryker operates on the principle that all animals are entitled to fresh air, sunshine and plenty of open space. The butter is made by cooperative farms in New England & Vermont.

Leiby's(opens in new tab) cream is gathered from local PA farms, and delivered weekly by Cream'O'Land to make our ice cream at The Franklin Fountain.

The eggs we use are organic and cage-free from Lancaster Farm Fresh Cooperative. All of their eggs are gathered from chickens who are fully pastured and fed only certified organic or non-GMO, antibiotic-free, and hormone-free supplemental feed. They spend their days walking around outside, looking for bugs and plants to eat.

Nuts

We exclusively and responsibly source hazelnuts from the Hybrid Hazelnut Consortium at local Rutgers University. They are committed to creating a research and breeding program to develop hazelnuts as a widely adapted, high yielding, and low-input sustainable crop.

Our whole nuts are roasted by Wricley Nut in South Philadelphia.

Our pistachio nut butter, used in everything from Pistachio Ice Cream to Pistachio Pralines, is from  Nutty Novelties of Telford, PA.

In the Summertime you can enjoy a scoop of our dairy or vegan Blueberry ice cream, made with Blueberry Bill Farms blueberries of Hammonton, NJ!

Grains

We source our large hand twisted pretzels from Shuey’s Pretzel Factory, in Lebanon, PA. Shuey's is a family owned business has been providing customers with hard and soft pretzels since 1927!

All of our flour is organic and from Small Valley Flour Mill in Halifax, PA.

The Franklin Fountain serves soft pretzels from Philly Pretzel Works; opening in 1960, its the oldest soft pretzel company existing in Philadelphia

When we make special malt or barley confections, we love using grains from Deer Creek Malt, Pennsylvania's first malthouse since prohibition.

Our Coffee Caramels, Coffee Cardamom Bar, Franklin Coffee Ice Cream, and coffee concentrate, is all made with Herman's Coffee, roasted in South Philadelphia.

We use solar evaporated flake sea salt, hand harvested from the Atlantic by Salty Acres in Avalon, NJ, in many of our products. Like our Sea Salt Caramels and Whirly Berley Bars, and Franklin Sea Salt Caramel Ice Cream.

Warwick-Furnace Farms in Chester County, PA grows the certified naturally grown lavender we use in our Lavender Caramels and Franklin Fountain Lavender soda.

We love using local Dad's Hat Whiskey in our Shane Whiskey Caramel!
